It's actually spelled salagadoula and it is a compound world: salaga and doula. Salaga is from the same base word as salad: salagadous, which means plant. a doula is a person who often helps pregnant women through her pregnancies, including the birth. Thus, translated out salagadoula means "plant assisted in birth." Which is what happens in the movie. The pumpkin, a plant, is turned into a carriage, a sort of birth.

actually, the root of 'salad' goes back to the Latin salāta, which is a past participle of salāre, which means 'to salt'
